Autumn wellness muffins

Ingredients

  • 1 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 1/3 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 3/4 cup pumpkin puree
  • 1 cup almond milk
  • 1/2 cup brown sugar
  • 2 tablespoon canola oil
  • 1 tablespoon flax seed
  • 3 tablespoons hot water
  • 1 teaspoon vanilla extract
  • 2 Macintosh apples, peeled, cored and diced
  • 1 tablespoon coconut oil

 

 

Instructions

Preheat oven to 375 degrees F (190 C)

Combine flax seed with hot water and set aside.

Cook apples in a pan with coconut oil and half the cinnamon. Set aside when soft.

Stir pumpkin puree, almond milk, brown sugar, oil, and vanilla extract in a bowl. Add the flax mixture.

Fold flour, baking powder, baking soda, salt and the rest of the cinnamon into wet ingredients.

Add apples and oats and stir until combined.

Spoon into muffin tins.

Bake for approximately 20 minutes until golden brown. Serve slightly warm!
